You have caught your fish, taken it home, so now serve it up with a seasonal sauce from wild garlic picked from nearby woodland.
Perfect with meat, fish, pasta or just simply smeared on your choice of bread.
Wild Garlic can be found abundantly across the UK in woodlands in the spring and super easy to identify with its powerful garlic smell.
Recipe -
- A good bunch of washed Wild Garlic
- Squeeze half a Lemon
- 90g of Pine nuts or Hazel nuts
- Salt and Pepper to season
- 50g of Parmesan
- Add a good glug of Olive Oil
- Blend until smooth
- Pour into jars and store
